Spanish Omelette
Ingredients:
- 600g potatoes peeled and cut into 1 cm cubes
- 2 lge onions thinly slicedย
- 3 eggs, lightly beatenย
- 2 tbs olive oil
- Salt & pepper
Method:
Cut the unpeeled potatoes into small bite-size cubes
Heat a heavy-based pan and add the oil and the onionsย
Cook for 5 mins until soft and golden
Add the potatoes into the pan and cook for 10-15 mins stirring occasionally until soft
Add the lightly whisked eggs evenly over the potatoes and cook over low heat for a further 20 mins or until eggs are set
Add salt and pepper as desired
Place the pan under the grill and cook for 5 mins until firm
Place a plate over the pan and turn it upside down to release the omelette
Serve with your choice of meat, chicken, fish, and salad
